Roasted tomato soup.
One of my favorite all time cookbooks is “The Cancer Fighting Kitchen” it is great on many levels, the general guidelines for people fighting cancer but also, the recipes are truly incredible. The soups and broth alone are worth the cost of the book. One of my favorite (well I have 2 absolute favorites and I will share the second with you in another post) is the Roasted Tomato soup.
I use roma tomatoes, cover with sea salt, and olive oil. Roast them in the oven until the skin peel away easily. Scoop out the seeds, then put the remainder of the tomatoes in the blender. Blend away until you have a smooth tomato base. Add some cream and homemade vegetable broth while you boil in a pot on the stove. Notice I am not giving you measurements usually that is because I typically taste as I cook. Oh also, add basil (fresh is always better but dried in a pinch) and seal salt and pepper until it makes your tastebuds happy.
